Some Fun Caviar Facts:

1. Caviar is a nutritionally dense food that was once used as a treatment for depression. Caviar is filled with selenium, calcium, phosphorus, protein, , iron, magnesium, and Vitamins A, C, D, B6, B12 and B2. It also contains essential amino acids such as lysine, isoleucine and methionine as well as argine and histidine. According to nutritional data, just one tablespoon of this luxury food contains as much as a gram of Omega-3 fatty acids that is beneficial in maintaining heart health.

2. Good quality caviar is distinguishable by species, color, taste, texture and even sound. Which is why I love the Caviar from Pearl Street. For instance; authentic caviar comes from the Acipenser family of the sturgeon. Quality caviar ranges in color from golden yellow to dark gray, brown or black. Caviar eggs should never be mushy or have a fishy aroma. Though delicate, the roe should be mostly intact and pop on the tongue to release a flavor profile that can be sweet, buttery and nutty.

3. The term caviar did not originate, as is popularly believed from the Russian word “Ikra”; Etymologically, it is rooted in the Turkish (Persian) word “havyar” which is derived from “khavyar” the Persian word for egg.

4. Consumption of caviar began with the Persians who regularly believed the eggs of the sturgeon fish could imbue them with physical strength and endurance. This belief, no doubt, fueled the enduring interest and appeal for this delicacy. Records indicate that during the 4thcentury, the presentation and eating of sturgeon eggs at banquets occurred with tremendous fanfare.

5. Due to environmental concerns and the depletion of the sturgeon population, the Convention on International Trade in Endangered Species (CITES); an international agreement between governments placed severe restrictions on the harvesting of Beluga and other sturgeon eggs. Caviar produced for consumption today, is farmed under environmentally healthier conditions than their natural habitat. The CITES provides general oversight of these farming operations and regulate “best practices” through a specialized coding system. - Again, ready the importance of sustainability below!

Pearl Street CAVIAR

Sustainability is a core tenet of how they do things at Pearl Street. They source our sturgeon from Qiandao (Thousand Island) Lake. They are raised on an open-pen farm fed by wild waterways, to produce happy and healthy sturgeon. 

They work closely with our farm to supplement the nutrients and minerals naturally in the mountain waterway with a feed ration that mimics sturgeons’ natural diet in the wild. The formula comprises organically-sourced seaweed, millet, soy, shrimp and sardines. The roe is then combined with salt to become Pearl Street Caviar.

For each domesticated sturgeon we use, our farm’s hatchery also fertilizes an egg and contributes fry (baby sturgeon) to the Amur River system, to revive the wild population in its native waters.

Going back thousands of years, caviar has been considered a magical elixir of sorts, due to its healing properties. At Pearl Street, we dug into the facts behind the mysticism, under the guidance of our resident dietitian, Dr. Chinara Tate, PhD. In an original white paper, Dr. Tate collected her findings from a nutritional study of our caviar after analysis by an independent laboratory. Key findings and nutritional facts about Pearl Street Caviar include:

  • Sturgeon caviar is rich in omega-3 fatty acids and key vitamins which may help alleviate symptoms of depression and bipolar disorder. In fact, even prior to rigorous scientific study, it was historically prescribed to alleviate symptoms of depression.

  • While a 4:1 ratio of omega-6 to omega-3 fatty acids has previously been associated with a 70% decrease in mortality, the typical Western diet has a ratio between 10:1 and 25:1. Consumed regularly and in moderation, caviar can help restore omega-6 to omega-3 balance. Notably, Pearl Street Caviar’s Keluga has a ratio of 1:23 (one part omega-6s to 23 parts omega-3s).
